OUR INGREDIENTS

ALMONDS

Sourcing almonds responsibly is important to our brand. We support Californian almond growers, primarily family-run businesses accounting for 90% of the industry and over 110,000 jobs. Our supplier works with those amongst these family farms that are align with the California Almond Stewardship Program (CASP), and are pledging to and aiming for sustainable cultivation by monitoring soil health, conserving water, and utilising nitrogen calculators for precise nutrient management. By 2025, they aim to cut water usage by 20% and achieve zero waste, fully utilising the almonds, including the repurposing of shells and hulls for livestock bedding and dairy feed, respectively. Their commitment is already demonstrated by their response to the Mediterranean climate's water scarcity, which has reduced by 33% water use from the 1990s to the 2010s, This is thanks to innovations like micro-irrigation—now used by 82% of almond orchards. These efforts are also aiding groundwater sustainability, essential for California's largest water storage system.

In the journey towards zero waste, these growers are also discovering new market opportunities for almond by-products, leveraging whole orchard recycling to enhance soil health, and experimenting with mixing almond shells with recycled plastics to create more durable materials, potentially lessening new plastic production. From a carbon standpoint, almond orchards act like forests, sequestering CO2 over their 25-year lifespan. Practices such as whole orchard recycling sequester substantial carbon, diminishing our collective carbon footprint.

CASHEWS

We source only the finest cashew nuts from Vietnam through a meticulous Positive Release System (PRS), where each batch undergoes thorough inspection and evaluation of physical and sensory characteristics before loading, ensuring the nuts meet our high standards, influenced by optimal growing conditions and precise harvesting techniques.

Our cashew supply chain is accredited by SMETA, ensuring the protection of workers against unsafe conditions, excessive hours, discrimination, unfair pay, and forced labour.

OILS

We use extra virgin olive oil over sunflower oil, the choice for most competitors (sunflower oil), for its unparalleled taste and lesser environmental impact. Olive trees demand less water, support greater biodiversity, and have a remarkable lifespan, yielding produce for centuries without the annual turnover required by sunflowers. Additionally, olive cultivation generally involves fewer chemicals than sunflowers, contributing to a healthier planet. It's a sustainable ingredient that elevates our products' quality and reflects our commitment to responsible sourcing.

We use cold-pressed extra virgin olive oil (EVOO) over sunflower oil, the choice of most of our competitors, we use EVOO for its unparalleled taste, higher nutritional profile and lesser environmental impact. Firstly, there is no heat or chemicals used in this process. Secondly, olive trees demand less water, support greater biodiversity, and have a remarkable lifespan, yielding produce for centuries without the annual turnover and intensive agro-inputs required for sunflowers cultivation. Finally, olive cultivation generally involves fewer chemicals than sunflowers, contributing to a healthier planet. It's a sustainable ingredient that elevates our products' quality and reflects our commitment to responsible sourcing.

We also use single origin cold-pressed oak-smoked rapeseed oil which is a superior alternative to regular rapeseed oil due to its exceptional qualities and local provenance. It is cold pressed to retain its natural nutrients and it preserves the oil. This oil which is triple filtered, and hand bottled on the farm, boasting a rich profile of omega oils and vitamin E, without the extensive carbon intensive processing regular rapeseed oil undergoes. Being locally sourced, it not only supports our commitment to reducing food miles but also ensures the freshest, highest-quality product, directly benefiting our country's local communities’ economies and environment. It's a conscious choice for unparalleled flavour and sustainability.

TRUFFLE

Our truffle comes in two exquisite forms: The first is an extra-virgin olive oil, cold-pressed in Spain to encapsulate the rich flavours and infused with the finest white wild truffle for a truly decadent taste. The second is our salt flakes, delicately infused with black summer truffle sourced directly from artisanal producers in Molise, a region untouched by industrial farming and free from pesticides and preservatives, ensuring pure, unadulterated flavour. Our truffle sourcing supports the preservation of traditional agricultural practices. Through these carefully selected partnerships, we are proud to offer ingredients that respect both palate and planet.

MAPLE SYRUP

100% A grade maple syrup, which is Canada’s highest stamp. Sourced from snow covered maple trees in Quebec, processed using time honoured methods, handed down for more than 200 years within the family business. Quebec maple forests shelter trees and biodiversity, store carbon, and provide valuable ecosystem services. The maple syrup production aids in: climate control, air quality, erosion control, biological control, pollination, water quality and water supply.
